Cast Iron Breakfast Frittata

Ingredients

Cast Iron Frittata
  • 12 Eggs
  • ½ Cup Cottage Cheese
  • 3 Pre-Cooked Turkey Breakfast Sausage Patties, Diced
  • ¼ Cup Parmesan Cheese
  • 4 Cloves Garlic - Peeled and roughly chopped
  • ¹⁄³ Cup Red Onion
  • 2 Cups Fresh Spinach
  • 8 Cherry Tomatoes Halved Lengthwise
  • Salt, Pepper, Oregano - To taste

Directions

  1. Preheat oven to 400°F.
  2. Beat eggs.
  3. Mix eggs with all ingredients except tomatoes.
  4. Spray a 12" Cast Iron Skillet with non-stick spray, and heat over medium heat.
  5. Pour mixture into skillet and cook until firm base is established - approximately 5 minutes.
  6. Transfer to oven and cook approximately 20-25 minutes (depending on how many fixin's you add in) or until the eggs are puffed and opaque.
  7. Arrange cherry tomatoes on top when the frittata is almost fully cooked.
  8. Serve and enjoy!
