September 12, 2025 Easy One Pot Baked Potato Soup Jennifer Anderson - Little and Smith Main Dish Ingredients 2 TBS butter 1 - Onion diced (white or yellow) half of medium or one small 1 tsp – Garlic Power 48 oz – Chicken Broth (From carton or diluted bouillon cubes) 1can – Cream of chicken soup (do not dilute) 1can – Cream of celery soup (do not dilute) 32oz/1 bag – Diced frozen hashbrown potatoes plain 16 oz – Velveeta cheese (original) 3 Dashes – Tabasco sauce (does not make soup spicy) Toppings – optional Bacon bits Shredded cheddar cheese Chives Green onions Additional optional ingredients – measure with your heart Frozen broccoli – add with broth Shredded carrots – add with onions Instructions On medium heat, melt butter in Dutch oven Add onions and sauté until soft Add garlic powder, stir Add chicken broth Add frozen potatoes, and boil for about 20 minutes.
