Spinach Orzo Salad

Ingredients

Spinach Orzo Salad cropped
  • 1 lb Orzo
  • 2 Tbsp Olive Oil
  • 1 Bag Spinach (do not use baby spinach)
  • 4 oz Feta Cheese
  • Garlic 
  • Scallions

Dressing:

  • ½ Cup Olive Oil
  • 3 Tbsp Red Wine Vinegar
  • 1 Tbsp Dijon Mustard
  • ½ tsp Oregano

Directions

  1. Mix ingredients for dressing and set aside - overnight is best for flavor.
  2. Wash spinach and trim stems off. Drain well.
  3. Cook orzo and drain. Mix with olive oil.
  4. Before serving, combine spinach, orzo, garlic, and scallions.
  5. Finish with crumbled feta cheese.
