Ingredients
- 1 lb Orzo
- 2 Tbsp Olive Oil
- 1 Bag Spinach (do not use baby spinach)
- 4 oz Feta Cheese
- Garlic
- Scallions
Dressing:
- ½ Cup Olive Oil
- 3 Tbsp Red Wine Vinegar
- 1 Tbsp Dijon Mustard
- ½ tsp Oregano
Directions
- Mix ingredients for dressing and set aside - overnight is best for flavor.
- Wash spinach and trim stems off. Drain well.
- Cook orzo and drain. Mix with olive oil.
- Before serving, combine spinach, orzo, garlic, and scallions.
- Finish with crumbled feta cheese.
