Salmon Patties

  • 3 Tbsp Olive Oil
  • ¼ cup Celery
  • ¼ cup Onion
  • ¼ cup Red Pepper (chopped finely and sautéed)
  • 2 Tbsp Parsley
  • 2 Tbsp Mayo
  • 1 Tbsp Dijon Mustard
  • 2 Cans Salmon
  • 1 Egg
  • Salt and Pepper
  • Panko Bread Crumbs

Instructions

  1. Remove any bones from Salmon.
  2. Mix everything except Panko in a bowl. Don't over mix.
  3. Make into patties, place in Panko, and coat well.
  4. Fry in olive oil 8 to 10 minutes trying to turn only once. They fall apart easily.
  5. Enjoy!
